These cookies remind me of Girl Scout Thin Mint Cookies!  Yum!  They have a little crunch to them and the subtle mint flavor!  They are a breeze to mix up and are a great go-to cookie when you need something quick!

Ingredients

  • 1 box Betty Crocker Gluten Free devils food cake mix

  • 1/3 cup vegetable oil

  • 2 eggs

  • 1 teaspoon vanilla

  • Sugar

  • Andes Mints

Directions

  • Preheat Oven: Preheat your oven to 350ºF.
  • Mix Ingredients: In a mixing bowl, combine all the ingredients using a spoon until well combined.
  • Prepare Dough Balls: Shape dough into 1-inch balls and roll them in sugar.
  • Bake: Place dough balls on an ungreased cookie sheet and bake for about 8 minutes.
  • Add Andes Mints: Immediately after baking, place an Andes Mint on each cookie and let it melt for a minute or two.
  • Spread Chocolate: Use a spoon to spread melted chocolate over each cookie.
  • Cool: Transfer cookies from the baking sheet to a wire rack and let them cool.
