These banana muffins are deliciously moist!  The blueberries add a burst of flavor, but they’re just as delicious on their own..

Ingredients

  • 2 cups featherlight flour

  • 1 teaspoon xanthan gum

  • 1/2 cup sugar

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1/2 teaspoon cinnamon

  • 1/4 teaspoon nutmeg

  • 2 bananas, mashed

  • 1/4 cup oil

  • 1/2 cup applesauce

  • 2 eggs

  • 1 teaspoon vanilla extract

  • 1 cup frozen blueberries, chopped

Directions

  • Preheat oven to 375º. 
  • In a large bowl, mix together featherlight flour, xanthan gum, sugar, soda, salt, cinnamon and nutmeg. 
  • In a separate bowl, mix the mashed bananas, oil, applesauce, eggs and vanilla.  Stir until fully combined.
  • Gradually add the wet ingredients to the dry ingredients, stirring until just moistened. Gently fold in the blueberries.
  • Spoon the batter into muffin cups that have been coated with cooking spray.  Bake for 12 – 15 minutes, or until golden brown and a toothpick inserted comes out clean. 

Notes

  • You can substitute plain yogurt for applesauce
