Banana Blueberry Muffins

Ingredients
2 cups featherlight flour
1 teaspoon xanthan gum
1/2 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
2 bananas, mashed
1/4 cup oil
1/2 cup applesauce
2 eggs
1 teaspoon vanilla extract
1 cup frozen blueberries, chopped
Directions
- Preheat oven to 375º.
- In a large bowl, mix together featherlight flour, xanthan gum, sugar, soda, salt, cinnamon and nutmeg.
- In a separate bowl, mix the mashed bananas, oil, applesauce, eggs and vanilla. Stir until fully combined.
- Gradually add the wet ingredients to the dry ingredients, stirring until just moistened. Gently fold in the blueberries.
- Spoon the batter into muffin cups that have been coated with cooking spray. Bake for 12 – 15 minutes, or until golden brown and a toothpick inserted comes out clean.
Notes
- You can substitute plain yogurt for applesauce
