minutesThese cookies remind me of Girl Scout Thin Mint Cookies! Yum! They have a little crunch to them and the subtle mint flavor! They are a breeze to mix up and are a great go-to cookie when you need something quick!
Ingredients
1 box Betty Crocker Gluten Free devils food cake mix
1/3 cup vegetable oil
2 eggs
1 teaspoon vanilla
Sugar
Andes Mints
Directions
- Preheat Oven: Preheat your oven to 350ºF.
- Mix Ingredients: In a mixing bowl, combine all the ingredients using a spoon until well combined.
- Prepare Dough Balls: Shape dough into 1-inch balls and roll them in sugar.
- Bake: Place dough balls on an ungreased cookie sheet and bake for about 8 minutes.
- Add Andes Mints: Immediately after baking, place an Andes Mint on each cookie and let it melt for a minute or two.
- Spread Chocolate: Use a spoon to spread melted chocolate over each cookie.
- Cool: Transfer cookies from the baking sheet to a wire rack and let them cool.
