Fire Tacos

minutesI was first introduced to Fire Tacos while attending girls camp for The Church of Jesus Christ of Latter-day Saints. It was a tradition to have them every year at girls camp. Now I know why. They are so amazing! They’re great cooked in the coals of a campfire, on a grill in the backyard, or even in your oven.
Ingredients
1 lb ground beef
Gluten Free taco seasoning
Taco shells
2 cans Refried beans
Cheddar Cheese, grated
Gluten Free Tortilla’s
Lettuce, shredded
2-3 Tomatoes, diced
1 can Olives
Guacamole
Sour Cream
Directions
- Prepare taco meat by cooking ground beef over medium heat until fully browned. Drain any grease. Add the taco seasoning and water according to package directions. Stir together and simmer for about 5 minutes.
- Prepare other ingredients: Dice tomatoes. Shred lettuce. Slice Olives. Prepare guacamole if making it homemade.
- Get a large piece of tinfoil and place your tortilla on it. Spread refried beans on the tortilla and sprinkle with cheese.
- Get a taco shell and put your meat inside and sprinkle with more cheese. Place the taco in the center of the tortilla. Fold the tortilla in half with the taco inside. Then wrap the tortilla in tin foil. Add a second piece of tinfoil and wrap again.
- Place your taco in the fire, on the BBQ, or in the oven for 3 – 7 minutes, turning over halfway through, until taco is heated through and cheese is melted. The cooking time will vary greatly depending on how you’re heating your fire tacos, and how hot it is. You may have to experiment on your first taco.
- Open up your taco and add lettuce, tomato, olives, sour cream and guacamole.
