Kung Pao Chicken

minutesThis recipe satisfies my cravings for Chinese food! Some homemade Chinese food recipes seem complicated and time consuming, but this one is not. The red pepper flakes add a little bit of heat, but it’s not super spicy.
Ingredients
12 – 13 chicken tenders
2 tablespoons cornstarch
2 teaspoons sesame oil
1/4 cup rice vinegar
1/4 cup GF soy sauce or tamari sauce
4 teaspoons sugar
3-4 green onions, chopped (use all of it!)
3 garlic cloves, minced
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon powdered ginger
1/3 cup dry roasted peanuts
Directions
- Cut chicken into 1 inch pieces, and place in a bowl. Add cornstarch to chicken and toss to coat.
- Heat sesame oil in a large saute pan or wok over medium heat. Add chicken and stir-fry 5 – 7 minutes or until no longer pink inside. Remove chicken from pan.
- While chicken is cooking, in another small bowl make the sauce by combining rice vinegar, soy sauce and sugar. Mix well.
- Add 3 green onions, garlic, red pepper flakes and powdered ginger to the pan and stir fry for 15 seconds.
- Add the sauce and stir together.
- Return the chicken to the pan and coat with the sauce. Stir in roasted peanuts. Heat thoroughly.
- Top with 1 green onion, chopped and serve over rice.

Hi Rachelle,
I am looking for a good GF pasta and am wondering if you have any suggestions? I am cooking dinner for our family and extended family over a vacation and some of my nieces & nephews have been recently diagnosed with Celiac. I'm trying to make all the family recipes GF so everyone feels good for our time together and they don't have to have an alternate choice. Also am wondering if you have a good substitute for Onion soup mix and Zesty Italian Dressing packets?

My favorite GF pasta is Tinkyada. I like their Brown Rice Pasta, or the Organic Brown Rice Pasta. I didn't really care for the White Rice Pasta. They have the Brown Rice Pasta in a lot of variations; spaghetti, lasagna, macaroni, fettucine, rotini, etc. All of them are great! I have not found a substitute for Onion soup mix. I used it prior to being gluten free for pot roast, but now I just sprinkle salt, pepper, and a little garlic powder on the roast. Then I put 2 or 3 bay leaves on top. It tastes delicious. What recipe are you using it for? I use actual Zesty Italian Dressing. The Kraft brand is gluten free.
