Meatloaf with Meatloaf Sauce

minutesMy kids love meatloaf and devour it every time I make it! I cook it in a muffin tin because it cooks in just 20 minutes, and everyone gets their own individual meatloaf. It’s super simple and a real time-saver.
The meatloaf sauce is the real star! My mother-in-law always served meatloaf with this sauce, and now we can’t imagine having it without—it’s absolutely amazing!
Ingredients
2 lbs ground beef
3 tablespoons dehydrated minced onion
1 egg
1 tablespoon GF Worcestershire sauce
1 teaspoon salt
1/2 teaspoon pepper
1/2 cup GF oats
- Meatloaf Sauce
1 cup ketchup
2 tablespoons brown sugar
1 tablespoon mustard
Directions
- Preheat oven to 375º.
- Rehydrate the minced onion in water, then drain off any excess.
- In a bowl, combine all ingredients and mix with your hands. Form into portions and place in muffin tins, filling each cup up to the top.
- Bake for 20 minutes, or until it reaches an internal temperature of 160º.
- Make meatloaf sauce by mixing together ketchup, brown sugar and mustard. Add more mustard or brown sugar to taste.
Notes
- The recipe makes about 15-18 individual meatloafs.
