My kids love meatloaf and devour it every time I make it! I cook it in a muffin tin because it cooks in just 20 minutes, and everyone gets their own individual meatloaf. It’s super simple and a real time-saver.

The meatloaf sauce is the real star! My mother-in-law always served meatloaf with this sauce, and now we can’t imagine having it without—it’s absolutely amazing!

Ingredients

  • 2 lbs ground beef

  • 3 tablespoons dehydrated minced onion

  • 1 egg

  • 1 tablespoon GF Worcestershire sauce

  • 1 teaspoon salt

  • 1/2 teaspoon pepper

  • 1/2 cup GF oats

  • Meatloaf Sauce
  • 1 cup ketchup

  • 2 tablespoons brown sugar

  • 1 tablespoon mustard

Directions

  • Preheat oven to 375º. 
  • Rehydrate the minced onion in water, then drain off any excess.
  • In a bowl, combine all ingredients and mix with your hands. Form into portions and place in muffin tins, filling each cup up to the top.
  • Bake for 20 minutes, or until it reaches an internal temperature of 160º.
  • Make meatloaf sauce by mixing together ketchup, brown sugar and mustard. Add more mustard or brown sugar to taste.

Notes

  • The recipe makes about 15-18 individual meatloafs.
