I love butternut squash, but often don’t have my act together in enough time to bake it in the oven for dinner.  The great new is – that cooking in the pressure cooker is quick, easy, and absolutely delicious!

Ingredients

  • 1 butternut squash

  • 1/2 cup water

  • Salt and pepper

Directions

  • Peel squash and scoop the seeds out.  Cut into bite sized cubes.  Place in pressure cooker with 1/2 cup water.  Season it with salt and pepper.  
  • Cook it at high pressure for 3 or 4 minutes. If you want to be able to mash it, then cook it for 4 minutes. If you want it more firm cook for 3 minutes. Use the quick release when it finishes cooking.
