This is my favorite way to cook vegetables! It’s so easy and delicious!

Ingredients

  • Avocado oil or Olive oil

  • Vegetables (carrots, zucchini, yellow squash, sweet potatoes, brussel sprouts, onions, cauliflower, broccoli)

  • Salt

  • Garlic Pepper

Directions

  • Preheat oven to 425º.
  • Wash and dry vegetables.
  • Chop vegetables into about 1 inch pieces.
  • Coat vegetables with 1 – 2 tablespoons of avocado oil or olive oil.
  • Season with salt and garlic pepper.
  • Roast vegetables for about 20-25 minutes or until vegetables are tender, turning vegetables over halfway through cooking time.

Notes

  • I love to use Real Ancient Fine Sea Salt and Real Garlic Pepper.
