This rice is very versatile!  I love how it goes perfectly with Pulled Pork salads, or as a side dish with Grilled Salmon.  The rice is flavorful with the lime juice adding a freshness to the subtle flavor of the boullion and cumin. Sometimes I add a few tablespoons of chopped cilantro. I like to make this in my rice cooker, but works great on the stove.

Ingredients

  • 5 rice cooker cups of rice (about 3 1/2 cups)

  • 3 tablespoons butter, sliced

  • 1/2 teaspoon salt

  • 1/2 teaspoon cumin

  • 1 tablespoon lime juice, or juice of 1/2 a lime

  • 3 chicken bouillon cubes

  • cilantro, chopped (if desired)

  • water – fill to line 5 of rice cooker

Directions

  • Rinse the rice thoroughly and add it to the rice cooker. Add water up to the 5-cup line in the rice cooker.
  • Place the butter, salt, cumin, lime juice and chicken bouillon cubes into the rice cooker.  
  • Cook according to the rice cooker’s instructions.
  • Fluff rice and serve.
