My first taste of a Turkey Reuben Sandwich was at a little sandwich shop in Kauai. I savored every bite and was determined to recreate it at home. I think you’re going to love this melty messy masterpiece! It’s guaranteed to hit the spot! It takes your regular turkey sandwich to the next level with the gooey Swiss cheese and the jalapeno-infused sauerkraut. The homemade Thousand Island Dressing is a show stopper! Plan a day in advance, so the dressing has time to meld flavors before you make the sandwiches!

Ingredients

  • Gluten Free Bread

  • Swiss Cheese, sliced

  • Sliced turkey deli meat

  • 4-6 jalapeno peppers

  • 2 – 3 cups fresh Sauerkraut

  • 2 tablespoons butter

  • Butter to grill the sandwich

  • Thousand Island Dressing
  • 1 cup mayonnaise

  • 1/4 cup onion, minced

  • 2 tablespoons ketchup

  • 2 tablespoons sweet pickle relish

  • 1 teaspoon lemon juice

  • 1/2 teaspoon paprika

  • 1/4 teaspoon salt

Directions

  • Make the thousand island dressing a day in advance. In a small bowl, mix together the mayo, onion, ketchup, relish, lemon juice, paprika and salt. Transfer to a container and store in the refrigerator. For the best flavor, wait 24 hours for the flavors to combine.
  • When you’re ready to make the sandwiches, start by making jalapeno sauerkraut. Cut the jalapenos in half, take the seeds out, rinse, then mince the peppers.
  • Heat a griddle to 350º. While the griddle is heating, melt 2 tablespoons butter in a skillet on medium heat. When the butter is melted, add the jalapenos and saute. When the jalapenos are soft, add the sauerkraut and stir together until it’s nice and hot. Turn the burner down to warm.
  • Place the inside of the 2 pieces of bread on the griddle, and butter the outside. While it’s warming, warm the turkey on the griddle as well.
  • When the bread is warmed, turn one piece over and place sliced swiss cheese on top. Place the warmed turkey on top of the cheese. Then top that with the jalapeno sauerkraut. Add a large spoon of the thousand island dressing on top. Then place the other piece of bread of top of that. Grill the sandwich until it’s golden brown, then carefully flip it over and grill the other side, until it’s also golden brown.
  • Continue making as many sandwiches as you’d like. Serve warm!
