Ingredients
- Mashed Potatoes
2-3 lbs potatoes
4 – 6 tablespoons butter
1/2 – 3/4 cup milk
Salt
- White Sauce
6 tablespoons butter
6 tablespoons featherlight flour
1/2 teaspoon salt
1/4 teaspoon pepper
4 1/2 cups milk
Directions
- Peel and cut potatoes and cut them into chunks. Put the chunk in a pot, cover with water, and boil until soft (about 10 – 15 minutes).
- While potatoes are cooking, start on the white sauce. In a large saucepan, melt butter and add 1/2 teaspoon salt and 1/4 teaspoon pepper. Stir in the flour and cook, whisking constantly, until the flour is heated through.
- Gradually add milk, continuing to stir. Cook over medium heat, stirring constantly, until the sauce thickens. Turn sauce down to keep warm.
- Drain the water from the potatoes. Mash them with a potato masher, then stir in butter, milk, and salt to taste.
- Serve white sauce over mashed potatoes and top with cooked peas!
